This is a favorite on crisp fall mornings. We like chunky applesauce served warm.
Combine apples, water and sugar in a heavy saucepan. Cover and bring to a boil. Reduce the heat and simmer until just tender. Mash a bit with a potato masher for a chunky texture. Add lemon, cinnamon, and vanilla, as desired.
