Pizza is nearly everyone’s quick, easy meal when there is no time or desire for cooking a complete meal. This homemade version has a thin crust due to the flour tortilla. If a thicker crust is desired, pre-made fluffy crusts are available in most supermarkets. The spice that can assist in a more healthful body comes in the form of the red chiles used in the barbecue sauce and in the caribe garnish.
Yield: 2 servings
2 wheat or white flour tortillas (10- to 12-inch size)
2 tablespoons spicy barbecue sauce
½ cup seared, chopped vegetables or pepperoni, cooked chicken, beef, or pork
¼ cup grated Cheddar or Monterey Jack cheeses, mixed
1 onion, chopped
Crushed red caribe chile for garnish (optional)
Preheat the oven to 425 degrees F. Place the tortillas on a baking sheet and bake for 3 minutes or until hot.
Spread half the barbecue sauce on each tortilla, then top with half the vegetables or meat. Sprinkle with half the cheeses and onion. Bake for 8 minutes, or until the cheese is bubbly. Sprinkle chile, if using, and serve.
Variation: Substitute salsa for the barbecue sauce.
